Today I decided I should try and bake my own gluten free bread mmm biggest hugest fail it was pretty gross! I bought a whole meal bread mix from Mrs Flannery's and just added chia seeds in as extra honestly if anyone has any gf bread recipes to share with me I will be forever grateful!!
My ego was pretty burnt after that I remembered Dave's Mum had given me a stack of gluten free recipes so I decided on two for Husbands work treats Choc Fudge Brownies and Jam Drops yum! The one thing I hate about gluten free you can't lick the bowl it just tastes weird!! :|
Note to self: do not pick up jam drops until completely cool otherwise you will burn your fingers with the jam and burn your lip from licking it off your finger rookie mistakes!
Jam Drops
1/2 cup sugar
1 egg
3/4 cup soy flour
1/2 cup corn flour
1/2 cup rice flour
1 tsp gf baking powder
125g butter
2 tsp Vanilla
1/4 tsp xanthan gum
1/2 cup shredded coconut
Strawberry Jam
1. Cream butter and sugar, add egg and vanilla, beat well.
2. Add sifted flours, xanthan gum and coconut and mix into a stiff paste
3. Make into small balls, place on greased trays, press in a hole with your thumb, fill with jam and bake at 180 degrees Celsius until golden brown.
Chocolate Fudge Brownies
1cup gf plain flour
2tbs cocoa powder
1/2cup condensed milk
4tbs butter
1/4cup castor sugar
100ml water
1/2cup Choc chips
1. Preheat oven to 180 degrees celsius, grease 25cm x 15cm slice tin.
2. Place flour, sugar, cocoa and water in a large bowl. Mix with wooden spoon until just combined.
3. Add condensed milk stir for 30srcs melt butter, and Choc chips add to batter beat for a further 1minute.
4. Pour into prepared tin and bake for 30-35minutes, ice and sprinkle with coconut over the top.

They look great. I haven't tried anything gluten free. I'm lucky that non of my children or husband needs it. I have been wanting to make some jam drops and I might just try it this weekend. Thanks for sharing.
Yeah I'm gluten free lucky husband just goes with it! I was a big bread lover so is the only thing that sucks!! Jam drops are the best!! So yummy
