Friendly Monoply & a new recipe discovered!

The Simpsons monopoly was out! My good friend came over tonight with her cute kids as we are neighbours now! What fun we have now how cool is it having your friends live right near you! We have been walking and swimming nearly everyday! Tonight we had a BBQ at my house and got the good old monopoly out yep I think it was my first time I didn't cheat! Hahahaha I made the yummiest marinade that I just have to share with you it's super easy and such a good excuse to use some produce from little veggie pots! Our game is to be continued.... Hopefully Jaymi will sell her properties to me so I can buy some hotels yes Jaymi you must sell!! Haha

What is your favourite marinade for BBQ nights? I love trying new recipes!!


Chilli Rosemary Thyme & Garlic marinade


2 tsp garlic
Small handful rosemary
1 red chilli, roughly chopped
Small handful fresh thyme
Pinch sea salt flakes
Generous grind pepper
1/4 cup extra virgin olive oil

Place all ingredients into a bowl mix together coat meat in it and leave in the bowl, glad wrap and place in the fridge for 2hrs before cooking on the BBQ.

Chocolate Coconut Balls

Chocolate Coconut Balls

1 packet milk arrowroot biscuits
1/3 cup of cocoa powder
1/2 cup desiccated coconut plus extra to rolls the balls in
1 tin (395g) can of condensed milk

1. Crush the biscuits and place into a mixing bowl.
2. Add cocoa and coconut, stir together then add condensed milk
3. Take small amount of mixture and roll into a ball then coconut
4. Continue with the rest of mixture, chill on a plate in the fridge for 30mins

These won't last long so delicious!

Dad's Apple Pie

Dad's Apple Pie

Ingredients:
1 can apple pie fruit, no added sugar (you can use any pie fruit)
2 1/2 cups SR Flour
1 egg white 
1/4 cup margarine, melted
1/2 cup raw sugar
1/2 cup milk
Extra flour to roll pastry
1 tsp cinnamon 
1 tsp cinnamon sugar
Extra milk to brush pastry top

Method:
1. Preheat oven to 180 degrees fan-forced grease pie dish
2. Mix flour and sugar in a large mixing bowl. In a separate bowl add milk, melted margarine and beaten egg white and stir until combined, pour milk mixture into flour and gently fold together until a dough forms.
3. Divide into two placing one half on a well floured bench, roll out pastry to fit pie dish that has been greased spread apples evenly on top of pastry and sprinkle cinnamon on top. Cut off any extra pastry off the sides.
4. Roll out remaining pastry to fit ontop of apples cut off any extra pastry that overhangs, using a fork go around the outside of the pie mark it around the whole dish. Sprinkle cinnamon sugar ontop and brush with milk, bake for 40-45mins or until golden brown do not over cook as it will taste dry.

Grateful & Thankful

I have been having the best start to my summer the weather has been glorious day after day there have been BBQ's enjoyed on my balcony, homemade ice blocks, swimming nearly everyday after hot walks in the sun around the lake, laughter is beginning to return with a smile I can't seem to wipe away slight sunburn reminding me about sunscreen! And most of all the company of great friends so much time to spend with my wonderful friends who fill my life with pure joy. The days feel so long I am loving when Dave gets to come home early from day light savings and we get to cook together and enjoy each others company watching all our favourite tv shows and candle light dinners on my balcony. Life this week has been so much more uplifting for which I am ever so grateful for that rush of happiness returning quite rapidly thankyou family, thankyou friends and thankyou my dear husband x x x

Perfect end to our date day

The wind died down, the sun slowly coming to an end and a balcony begging for me to sit and enjoy dinner what a perfect end to our day.

Caramel Slice

I always think caramel slice is the hardest desert and the easiest to wreck but this recipe has come out winning! I found it on kidspot and mine turned out delicious especially with the oats! I couldn't possible keep it to myself so here it is!

Ingredients:
1 cup self raising flour
1 cup coconut
1/2 cup brown sugar
1 cup rolled oats
150g butter, melted
395g can sweetened condensed milk
2 tbs golden syrup
30g butter, extra
150g plaistowe rich dark chocolate, melted (I used milk chocolate instead)

Preheat oven to 180 degrees

Combine first five ingredients in bowl and mix well, press into base of baking paper lined 18cmx28cm lamination tray. Bake for 10mins or until golden.

Combine condensed milk, golden syrup and extra butter in a saucepan bring to boil stirring

Reduce heat and simmer for 5mins stirring until a light brown colour and becomes caramel

Pour caramel over cooked base, return to oven bake for a further 10mins keep an eye on it so it doesn't burn!

Let it cool down and spread chocolate over caramel filling allow to set in the fridge before cutting into slices.

That Chocolate Slice

Dave always said I would be the best wife if I could make his Mum's chocolate slice yep that slice is the best in history! So I decided to finally give it a crack! The funny thing is they all love it when it's in the freezer and stays there haha!

Ingredients:
125g butter
1/2 cup brown sugar
1 cup coconut
1/2 cup plain flour
1/2 cup self raising flour
1 Tbs cocoa
1 egg

Icing
1/2 cup icing sugar
1 tbs cocoa
1 tbs butter

Preheat oven to 180 degrees and line slice tin with baking paper.

Add all dry ingredients in the bowl melt the butter and pour into the bowl.

Beat the egg and add in, mix all ingredients until combined, pour into prepared slice tin.

Bake for 20mins, add all icing ingredients and stir and ice the slice when cool, sprinkle coconut over icing.

Happiness cannot be found

Twenty One days until I visit mum, dad, my sister, nephew & niece to say I'm excited would be an understatement! I sure am going to miss Hubby hopefully he survives without my baking haha! I haven't seen my parents since my wedding in May so I can't wait to spend some time together and most of all go Christmas shopping ahh Christmas is creeping up on us sooooo fast it's crazy!! Soon it will be 2013 and hopefully an equally good year like this year and of course our one year wedding anniversary I am looking forward to it so much we are unsure of what we should do for it but as long as we get to spend it together I don't mind :)

These last few months have been crazy and a real life tester but one must always push through the crap, make hard decisions, try to be strong and after much debate realize that happiness cannot be found and to let go of that negative part of your life and as my Dad's advice is always the best Life is too short to take crap when it could take months and years for it even to slightly improve just move on be happy with that man of yours that's all that matters. I am so lucky to have Dave, my family, my friends and if I die tomorrow is everything right now in my life something that I am happy about....

I think not.

Stuck in the slowest of all time

I feel like I'm stuck like time is going so slowly that I have ample opportunity to spring clean, to write more postcards, to cook time consuming meals, so many things I could do yet I'd rather sit here and wish my time away I have so many things to look forward too at the end of this year and start of next and all I want to do right now is run and grab it all and START! I'm so impatient but especially when I know good things are coming right for me. Lately I'm like a little kid on Christmas Eve I cannot at all sleep in I'm excited for life I feel like if I start or finish things right now I might miss my calling! Right now I'm stuck in the slowest of all time baking, cooking, cross stitching and spending time with my Husband over and over again Monday to Thursday. The best thing I love about this stand still moment in life is the extra hour I get with Dave cause I know soon it'll be a hectic Christmas month ahead so it's been so nice making dinners together, watching tv shows just seeing him come home makes me so happy but most of all Thankful for him standing by my side to help push time along!
