Wow bloggers worst nightmare! My Internet was a goner! Seriously didn't realize how dependent Dave & I are on Internet how sad is that! I did get extra snuggles the whole week though maybe I should break the Internet more often! Well now I'm back I have a couple of recipes to share! Recently I've learned that I am gluten intolerant and boy it's like learning how to cook all over again... I had to say goodbye to my favourite things BREAD, CAKES, BANANA BREAD and CUPCAKES yep I thought my life was over!! As my Dad says we could just live in France and eat bread all day & he could drink the wine :( so bread goodbye my lover, goodbye my friend, you have been the one, you have been the one for me!
On a good note though I have lost 5kgs I am holding chiropractic responsible as when I walked in that first day I was 5kgs heavier on one side and now my hips are even hooray! My sister has lost 10kg so I'm halfway catching upto her, she does have a secret weapon though... MUM she is the face of tough love you say your tired and she grabs your arm and makes you go even harder I swear to god in another life she was a personal trainer, a weightloss guru! We are pretty lucky!
Here are a few of my gluten free recipes I've stumbled upon on the internet and if anyone has any good ones feel free to send me an email or maybe some tips! I'd love to hear from you!!!
Mexican Chic
40ml vegetable oil
500kg chicken mince
1 brown onion, finely chopped
1 tablespoon garlic paste
1 red capsicum, finely chopped
1 teaspoon chilli powder (make sure it's powder not flakes)
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons tomato paste
1 can red kidney beans
1 can diced tomatoes
1. Heat 1 tsp oil in a large saucepan over med-high heat. Add 1/3 of the mince and cook. Repeat in 2 batches, transfer to a large bowl.
2. Heat the remaining oil in the saucepan add the onion, garlic and capsicum and cook. Stirring for 4mins or until onion is soft. Add chilli, oregano, cumin and coriander and cook stirring for 1min.
3. Stir in the mince, tomato paste, kidney beans and diced tomatoes. Bring to the boil, reduce heat to med-low. Cook, stirring occasionally for 20mins season with salt and pepper. You can double the recipe and freeze half as well.

Banana & Rasberry Loaf
Makes 2 loafs
250g nuttelex spread
2 tsp vanilla Essence
1 1/2 cups caster sugar
4 eggs
1 1/2 cups of gluten free SRF
1 cup soy flour
1/2 cup rice flour
1 tsp bicarbonate soda
2 tsp xanthan gum
2 cups mashed banana
1 cup frozen raspberries
1. Preheat oven to 160 degrees Celsius, grease 2 loaf tins.
2. Using an electric mixer, mix vanilla & sugar until light & fluffy. Add eggs one at a time. Sift flours, bicarbonate soda and gum into a bowl. Add half the mix at a time stir to combine, fold in raspberries.
3. Bake for 1hr and then transfer to a cooling rack.

Handyman Husband Part 2
My newest project under $150 bargain! I decided to sell my Dad's beloved outdoor setting that I tried so desperately to get off him (it's oh so comfy!!) one of those outdoor settings you melt in and don't wanna get out of! But before I go into my project a little about the surroundings..
A while ago I transformed my bedroom from beachy blues to black, yellow & grey I saved up for ages to buy my leather low bed and then added all the accessories around it mum even crochet me the cutest throw rug! I loved it so much I decided to go beyond the bedroom and start with my lounge room!
We purchased a new lounge with our wedding money in charcoal fine cord from Plush we've got 2 more weeks till it arrives yay! I decided again as it was my most expensive buy I will decorate the colours off that I think it's important for your main pieces to be in a basic colour so you can change your accessories anytime you like! It's been good having the couch made as it takes 3months so I had plenty of time to save and redecorate!
I got a bargain buy from Ikea $1.99 for yellow vases! Picked up some great accessories from pillowtalk, spotlight, earthborn and online stores on Etsy.
Research is definitely the key to success before I go house shopping I always research on their websites, magazines, gumtree etc... And get an idea of what I envision for my space!
The lounge room is complete minus my couch so I will post pictures once I have the star in the room! Although I did pick up recently a bargain on floor lamps so I will post a pic of the amazing value! Buy one and get the second 50% off only cost me less than $100 pretty good value and arrange of different colours they are from Beacon lighting.
So now to my project! My balcony it's kind of a odd shaped balcony and was quite annoying to furnish as only one side gets a good amount of sun daily but it does have a pretty view of the trees and we get the prettiest birds coming to say hello daily. I have been on the outlook for a yellow table considerably smaller than my table & chairs from Dave so it made the space brighter and easier to move around. I couldn't find one in the colour I liked so I bought a cute square woodern setting with two chairs from Bunnings and decided to pick a yellow paint colour and paint it myself.
I chose "rise and shine" in taubans endure and coated it with "white knight acrylic gloss finish" afterwards to finish off the look and seal it. I picked up my cushions and the cute dolly from spotlight and my pot and pansies are from bunnings as well. (The outdoor mat was from my parents) we didn't bother to sand back the chairs or table as it didn't have a shinny lacquer on them, we decided on three coats and are really happy with the result.
I think by the time I was on the second coat of my chair and table Dave was still painting one coat on his seat so slow I swear haha! Overall it took us about 5-6hrs including drying time.
I am definitely loving the yellow flowers too they came back extra bright this year compared to last winter! I am so inlove with my balcony now it's letting so much more light into my unit, the colour is so cheerful and the cute touch of flowers the colours now flow from outside in and vice versus I cannot wait for my lounge!!

Have you ever met your twin?
How weird is that moment you meet someone and you know they were meant to be your twin!
Last night I met my Mum's twin it was one of those moments where you felt like you had known the person for decades we laughed and swapped funny family stories, she couldn't believe I was married and our husbands were the same hopeless at anything handyman but obsessed with sport. Great I guess there is no hope of Dave becoming a Bunnings fan. :( She had the same hair, skin tone, loved the same colours as mum it was like It was doing Mum's makeup it was crazy!
As soon as I phoned Mum she said well did you get her name she is most likely a distant relative... Maybe I need to start going to family reunions! Is it just my crazy massive family that have those? Haha
I remember when I was younger my brother, mum and I went to the shopping centre on school holidays and in the food court we always saw Mr Beans twin (Mr Bean from the tv show & movies) haha he was identical it was crazy I use to ask my Mum if she could get his autograph for me. Instead for Christmas that year she bought my brother and I Mr Bean Teddy's haha I think I still have mine!
I wonder what my twin out there looks like maybe she's got the brainy side cause I sure only got creative in me!

Happy Anniversary
A very very belated "happy anniversary" to my Mum & Dad 22years of being each others rock.
I think the paragraphs in my wedding speech best describes my parents
My mother is the strongest rock not only in my life but in my family’s, she has been by my side through this whole journey and it wouldn’t have been so fun without her! I’m sure most of you have heard what a little monster I was when I was younger so you can only imagine what my mother was up against for my wedding planning but I think I finally surprised my mum in a good way! We have grown so close over the past years and she has been such a wonderful support system for me. I admire my mum’s courage and strength and her devotion to this family. She loved Dave from day one and took him straight into our family. I love you mum and I hope that I can live up to at least half the wife and mother that you are.
My dad. I think the most important thing to say about my dad is that after many persistent years of learning golf you finally beat Dave on the golf course! Now don’t listen to him when he said he let you win because believe me I have never heard a grown man cry ( I don’t think he knew I was home though). Through my life you have taught me so many life lessons and the importance of setting up our future. Whenever I was lost in life you always knew how to guide me back in the right direction or say the right thing. My dad has always been the biggest teddy bear and showered my mum with love I can only hope that my marriage is as strong as yours! You have always been the man of wisdom and I can only hope before you move you accomplish my long list of handyman tips to teach Dave or you will forever be finding yourself with a month’s list of jobs when you visit me!

Ps.. Dad loves the tv show "sons of anarchy" and one year for his birthday we bought him fake tattoo sleeves and his friend made him a "sons of Jacaranda shirt" Dad always reads my blog so I'm probably gonna be in trouble but it's just too funny not to share haha!
