8 baby washed potatoes
40g of butter
1 garlic clove, finely chopped
1 red chilli, deseeded and finely chopped
Salt and pepper
Chopped fresh, coriander leaves to garnish
1. Bring a large saucepan of lightly salted water to the boil, add the potatoes. Bring back to the boil and cook for 15mins or until tender, drain well.
2. Melt the butter in a large saucepan, add the garlic and chilli and gently stir-fry for 30secs. Without browning.
3. Add the potatoes and stir to coat in the butter, then season to taste with salt and pepper. Sprinkle with the coriander and serve hot.
