Banana Cake With Passionfruit Icing

My earliest memories of cooking would have to be Dad saving brown bananas I never understood why he loved cooking with them!


Today I have found the appreciation only 21years late! What have I been missing out on! I must admit I hated cooking with bananas my recipes always came out to dry or not cooked enough but this recipe was perfect I think it was the secret ingredient sour cream! I've never heard of that in banana cake before but it worked a treat the cake is so sweet and moist to eat!

Attack of the Surprise Date

What a Lovely day...


Got up bright and early had the strongest coffee ever (I needed it only had 3hrs sleep!)off to my chiropractic appointment I went, so the results were the only downside to my day I'm already in phase 2 of spinal degeneration but the good news is from phase 2 to phase 1 they can be reversed yay! So I had my first ever adjustment. What was weird is the doc asked me to lay in the middle of the bed and I thought yep I'm dead straight suddenly he and my husband started giggling I'm like what's so funny "your so crooked this just proves your spine is so out of whack!" Anywho 15mins late and about a million cringing sounds bam! It was all over! (I'll admit I was scared my hands were all clammy I thought I would be screaming!) now I just have to go back 2 times a week for the next 3 months I hope this works cause my spine and neck is killing me!! It'll be so worth it in the end (think positive!)


After the chiropractor I blind folded Dave cause I had a little surprise Install for him I spent all yesterday planning my attack of the surprise date! I drove him to my work (last night I had spent like 20mins carrying his 1 tonne golf clubs and squeezing them into my boot! Nightmare haha) I left him in the car (don't worry I left a window down!)got the code for golf balls to take to the driving range got over to the other side of the resort, took the blind fold off and SURPRISE! And what came out of Dave's mouth... How do I play golf in thongs?? FUCKKKKKKK I forgot to tell him appropriate attire so yep we had to drive all the way home and back again but nonetheless I think he loved just having a hit! The day was beautiful sun was shinning not a cloud in the sky or a soul on the driving range utter bliss! Afterwards I took him for his fav Nandos! Yum.


After our funfilled day I remember I had a lovely afternoon tea to attend with the girls from work (by this time in the day my back was so painful!) I layed on the couch DEAD! What did my most amazing husband do he made me cinnamon muffins to take to the afternoon tea (we all had to bring a dish) and watered the garden! Can I get anymore lucky?? I'll post some pics of the afternoon tea Terri is so creative and the biggest Tea Lover! She had the best table setting with all handmade tags and a selection if all different teas of the world she is just amazing!

Can't wait for the next afternoon tea!!

Date Night

Today is Date Night!

I always get Overly happy on Date Nights and usually bust out a few things I like to cook for the husbands lunches I think I'm feeling especially grateful and I'm going to make him one of his favorites Cinnamon Crumble Muffins after all they were on special. I'll make sure I post some pictures! We are going to see the movie Prometheus tonight, Dave has been raving about it for weeks! something about a precall for the movies Alien.

i'm also looking forward to this weekend Dave's brother, sister & brother in law are making an appearance on the coast I always get especially happy cause this means Big Jim (Dave's brother in law) is bringing some Cutlets!! Can you believe it $40 for 2kgs wow when was the last time you could get cutlets that cheap! They are amazing! I Love family discounts! (he works at Gatton Butcher) I'm especially happy to see his brother too he recently got engaged to his beautiful fiancé Mandy she is currently living in Bali with her two handsome boys and will be soon moving to Australia! Their wedding is early next year and I offered to take their wedding pictures for them :) I took some awesome pictures of them in Bali on our first holiday there I have to share some with you they have the most amazing sunsets over there!

Last night I rang my Mum & Dad to tell them I'm coming for a visit in November for Dads birthday, they recently moved to Canberra to be with my Nan & Pop and after being away for 10years my beautiful sister finally gets them back! Im so excited to go down for a visit and see there house and just spend some quality time with them and my sister, niece and nephew. Hopefully time goes quick!!

I'm off to start baking!

Handyman Husband??

The last few days have been a whirlpool of attitude, whoever said DIY projects with your husband are a good hobby obviously didn't live in the same house!

We decided to cover our dinning chairs as we purchased a new lounge with our wedding money and it's gonna take 3months to be made so it was a great opportunity to start removing all the browns and blues as we have now gone for charcoal, black & yellow in the lounge room.

As no one knows yet Dave is well.. How can you say this nicely not a handyman AT ALL! This was a challenge for me as my dad is the best handyman I know, so I took it upon myself to be taught by dad and now I can't get enough of it! I am constantly at Bunnings (our local hardware store)

We went into this chair upholstery challenge very very blindly! I asked my mum ages ago and she said something about a stapler gun and material so off we went into spotlight purchased our material and to my surprise it was the same material as my couch and in the clearance bin it was clearly my day!

When we got home we just thought yep pull the old staples out trace the chair cover and bam! Staple the new one on but oh no the thing was sewn on it was a nightmare! The first chair took 3 hours, a million swear words, some evil eyes and a much deserved drink break! Finally we got the hang of it and decided to just put the new fabric over the old one.

It may not be the most perfect new chairs but atleast we finally accomplished a DIY project with the not so handy husband!
