Date Day Spring Style

Anything with bunnings in the same sentence I am there! So today was a pretty fricken awesome day in my eyes I think one of our best Date days so far! I always wake up really early when I know I'm going to do something I love but I knew Dave wanted to sleep in so I was actually nice this morning and let him till 9! that way grumpy Dave wouldn't surface for the whole day! #winning After our morning coffee (no start to a fun day is complete without my Nespresso coffee! I'm hooked on Romas atm) and off to Bunnings we went. Its spring so I want colour and yummy veggies in my garden ASAP!

We bought Lettuce, carrots, tomatoes, marigolds, strawberries, carnations, petunias and the cutest pot I found for only $20 bargain. I can't wait to start eating all my fresh veggies and fruit!! I sure do love my gardening! Check out my Yukka I bought one for $3 at Ikea 2 years ago and look how massive it has got now! And my bonsai tree my Dad passed on to me was nearly dead yes Dad it totally was! And I have bought it back to life it's doing so well so many new leaves. The chilli plant is starting to flower and my basil and spring onions are growing fast! Pansies popping up everywhere life in this garden is good or should I say pots (I'm still dreaming of the day I buy a house and have the best raised garden bed full of veggies, maybe I need to let my inspiration run wild on pinterest tonight).

After our gardening session we popped over to grilled for some lunch seriously it should not be so close to my house cause the burgers are to die for so fresh and yummy I have never had a bad one! Then to the movies to watch Expendables 2 with our friend Steve (yes I crashed the man date but this movie was right up my alley! ha ha). To say the movie was awesome is a understatement!! Chuck Norris you are da man!! It's definitely worth going to see it if your into action movies which I grew up watching you will love it!

Back home In time for a BBQ on my Weber Q yummy, Gold Coast was definitely showing off today for the first time in forever I didn't even need to wear a jumper! It was just beautiful!

Janelle Bloom we meet again

Janelle Bloom I do love you! I think you were born to cook everything I love to eat! It's no secret her Condensed milk choc chip cookies are my favourite! So I decided her peanut butter cookies would be to die for as well! And I can't go past a raspberry cake! I had extra berries so decided to chuck them in too :) so here are her recipes! Always so easy and simple!

Janelle's peanut butter cookies
Makes 24

375g jar peanut butter (Kraft brand)
1 cup caster sugar
1 egg
200g white chocolate, roughly chopped

{variation for macadamia white chocolate cookies, reduce the white chocolate to 100g and add 100g roughly chopped macadamia nuts}

1. Preheat oven to 180 degrees no fan and 170 degrees fan-forced. Line two baking trays with baking paper.

2. Combine peanut butter, sugar and egg in a bowl. Stir with a wooden spoon until the mixture thickens (keep stirring until it does) add chocolate and macadamias, stir until well disturbed.

3. Roll tablespoons of mixture into balls and place on prepared trays, flatten with fingertips to about 1cm thick

4. Bake one tray at a time for 12-15mins or until light golden and a little darker around the edges (you can smell when they are ready) allow to cool on trays for 10mins then transfer to a wire rack to cool completely.


Olive oil raspberry cake
Serves 10

4 eggs, at room temp
2 cups caster sugar
1 teaspoon vanilla extract
1 cup extra light olive oil
1 cup apple or pear juice
3 cups of plain flour
1 teaspoon baking powder
300g fresh or frozen raspberries
1 tablespoon icing sugar

Rasberry Cream
300ml double cream
150g fresh or frozen raspberries

1. Preheat oven to 170 degrees no fan. Grease and line the base and sides of a 4cm deep 20cm x 29cm slab pan with baking paper, allowing a 2cm overhang at both long sides

2. Using an electric mixer, beat eggs, caster suger and vanilla in a large bowl on high speed for 3mins or until pale and thick. Stir in oil and apple juice. Sift flour and baking powder together over the egg mixture. Fold gently until combined.

3. Pour two-thirds of cake mixture into the prepared pan. Top with half the raspberries. Pour in remaining cake mixture. Top with remaining raspberries. Bake cake for 50-60mins or until skewer inserted into the centre comes out clean. Stand cake in the pan for 10mins then use the baking powder to carefully lift it out onto a wire rack to cool.

4. For the raspberry cream. Whisk the cream in a large bowl until thick. Mash the raspberries with a fork and swirl through the cream.

5. Dust the cake with icing sugar just before serving with the raspberry cream.

Hubby the Researcher of all things Ebay

I love how my Husband secretly bids on so many eBay things if I ever want something he is such a researcher I always joke that he's such a tightass maybe he is but honestly he wins everytimes not in every bid but wins at bargaining this quality I admire because those who know me best I am the biggest homewares bargainer out there! Sometimes it's even by accident when it scans up cheaper those are the best days! We just finished a long weekend here I had a postal pickup card in my car for three days! I am impatient! My parcel was finally there after my second trip then stupidly I decided to check my mail box yep two more parcels to pick up! Let's just say the post office ladies think I'm the best housewife coming back three times today normal people would have waited tEBayill tomorrow to pick up the other two but to me postal pickups is like trying sleep on Christmas eve I get way to excited!! So far I have new foundation from Mac way cheaper than Myer! And new battery & cord for my laptop until we buy my Mac Laptop yay! I am still awaiting perfume you should see how much Husband gets 100mls for holy shit! A Mac lipstick, An iPad case & an iPhone case wahoo hurry up overseas mail!!

Indi is such a beautiful friend of mine we went to school together and use to do acting as well! I swear I grew up at Indi's old house it was awesome right on the beach we would always sun bake on the roof top and walk along the beach home from school. Indi is a primary school teacher at Silkwood School those little kids sure are lucky to have her!! I miss how much we use to hang out all the time!

Doreen is Indi's mum and also my celebrant for my wedding she did such a beautiful job it made our day even more special knowing we had Doreen's blessing. She is definitely a lady of many talents! Doreen & her Husband also named Dave! Own this beautiful Yoga Centre for as long as I can remember they have done so many charity trips to India such a beautiful journey they do! I love my Dad because...

I am so lucky to have you as my Dad I was such a handful since the day I was born I still blame the allergy to asthma medicine I swear! But hopefully I have grown into the woman you are proud to call your daughter, hope you have a really good day tomorrow I am so proud of you and your golf handicap you have finally lost the nickname "aqua man" hehe. Hopefully Mum makes you a awesome breakfast not the other way around! Love you bucket loads and more X


What I love the most about Dad

-he has the best Dad jokes & humor just like mine!
-he reads my blog daily
-he makes my favourite Berry Ice Cream
-he is the best baker of all things sweet that I know!
-he loves bunnings as much as I do!!
-he is the only handyman I know & a great one too!
-he loves bread, coffee & sweets as much as I do
-he loves his dinner before 6pm like me!
-he walked me down the aisle
-he loves my hair curly & insists on spelling me name as "stef"
-he said yes when Dave asked him for his blessing to marry me
-he is wise
-he use to be a rally driver

Most of all he is the best Dad for being a Dad to Simon, Tim & Carly!
